Carlos and his wife manage his farm in the Bruselas district, near Pitalito in southern Colombia. Driven at a young age to become a respected and knowledgeable producer, Carlos spent many years working in Huila's best known growing regions and furthering his education in Colombia's National Learning Service for coffee production.
His four-hectare farm is planted exclusively with Caturra. Once harvested, he allows the coffee to ferment in the cherry for 12 hours before depulping, and then a second fermentation for a full 24 hours before starting the washing process. These extra steps in the fermentation process bolster the fruited qualities of the coffee and give it a long-lasting, sweet finish.
