Victor only plants Tabi on his farm - a wide, bushy coffee plant that is resistant to coffee leaf rust. The unique shape of the tree also makes the picker's job less strenuous allowing for better cherry selection during harvest. Once the cherries are picked they are allowed to ripen overnight, then they are density sorted and depulped. The following days cherries are then pulped and mixed in with the coffee that has already been fermenting, creating a unique cup quality. This coffee has a tropical, fruited quality to it, but a marzipan-like softness throughout. Finding a farmer who only plants Tabi is rare and this coffee is a great example of the variety.

This coffee is so good. Upon opening the bag I smelled the beans and it took me out of my kitchen and I felt like I was at the roasting facility. There really are no words to properly give credit to these beans. Highly recommend checking this one out.
