coffee details

Edin Pillimue began working with coffee at the age of 14 and later inherited two small farms from his parents. This offering comes from La Reforma, a parcel planted with mostly Castillo and Caturra trees. Along with his wife, two daughters and extended family, Edin works diligently to produce excellent coffee.

After harvesting and de-pulping, his coffee undergoes a full 24-hour dry fermentation before it is washed and laid out to dry on parabolic beds. Edin is one of the few producers that we work with that cups his own coffee after each harvest to better gauge the quality and see how to improve his methods. Although his farm is just across the border from Huila, he commutes three hours one-way to pursue professional education as a coffee producer.
