Raquel Lasso, Nariño
Raquel Lasso and her brother Jeremias are co-president of the producer association we work with in La Union called FUDAM. Raquel's 4-hectare farm is at very high altitude in Buenos Aires de Cartago, just above the town of La Union. She grows primarily Caturra, as the Colombia and Castillo varieties planted there have almost been entirely removed. Her process - manual depulping, fermentation for upwards of 22 hours, and hand-washing done within the same tanks. The parchment is dried on parabolic beds for 12–18 days, depending upon the climate.
