The Sightglass Espresso Guide: Dialing In by Taste

Espresso is a moving target. The same beans, the same grinder, the same hands and the shot still drifts as the coffee ages. Dialing in isn't a one-time setting; it's a habit of small corrections.

Here's the baseline, and how to read what's going wrong. This recipe is a solid starting point for both of our espresso blends, Owl's Howl and Crown Point.

Starting parameters

  • Grind: 18g dose
  • Yield: 36g
  • Time: 27–31 seconds

Treat these as a starting point, not a rule. The real work is tasting the shot and adjusting from there.

Reading bitterness

Bitterness shows up as a dryness at the back of the palate, one that lingers longer than it should.

Causes:

  • Grind too fine
  • Dose too low
  • Over-extracted (brewed too long)
  • Water too hot (above 202°F)

Fix: Coarsen the grind, lower the dose, or pull for less time.

Reading sourness

Sourness puckers the mouth and shows up as sharp sensations on the sides or tip of the tongue.

Causes:

  • Grind too coarse
  • Dose too high
  • Under-extracted (brewed too fast)
  • Water too cool (below 200°F)

Fix: Fine up the grind, raise the dose, or pull for more time.

Working with fresh coffee

Rest espresso at least 4 days before pulling shots. Freshness changes how the grind behaves:

  • Fresher espresso need a coarser grind.
  • Older espresso need a finer one.

Always check the roast date before you dial in, it tells you as much as the taste does.

The dialing-In order

Hit your yield first. Get the shot to 36g before touching anything else. Once yield is consistent, adjust grind size to bring the extraction time, and the flavor, into range. Chasing time and yield at once just means chasing your own tail.

Dial in for body and sweetness, not just numbers on a scale.
