What freshness actually means

Freshness isn't a single moment — it's not just a date stamped on a bag. It's a system of decisions that starts on a farm thousands of miles away and ends in the cup we hand you at the cafe.

Here's what that system actually looks like.

It starts at origin

Long before a bean is roasted, freshness is already being decided — at harvest.

Our Production Manager, JT, puts it this way: "When we talk about coffee freshness, it is much more than the just the roast date — it's an entire system, processes and steps that begin thousands of miles away when coffee cherries are harvested at their peak ripeness. Fresh coffee starts here, on the farm in the talented hands of producers and skilled pickers. Sightglass' seasonally based sourcing program works diligently with our partners to have those coffee cherries processed and the green coffee shipped from origin as quickly as possible."

That's the part people rarely see: cherries picked at the right moment, processed with care, and moved quickly — because green coffee, like anything agricultural, has a window. Our sourcing program is built around that window, working with producers season by season.

Roasted vs Rested

Once green coffee lands, the clock is running — but not in the way people assume. Once roasted, coffee is best after it has rested. 

"After arrival, our team works fast to coordinate, collaborate and plan how to get each coffee roasted and flowing to customers as swiftly as possible," JT says. "The tricky part is striking a balance between fresh roasted coffee and rested coffee. It is integral that Sightglass customers experience the best of what we have to offer and that includes tasting coffees at their optimal expression, which requires a few days of rest after roasting. The right amount of patience and a coffee will absolutely come to life."

This is the part that surprises people: a coffee straight out of the roaster isn't at its best. It needs a few days to rest — for CO2 to release, for flavors to settle. This makes our online offerings make the most sense, because the coffee is roasted to order and then resting on it's way to you. Depending on where you are, you'll either receive a coffee perfectly rested or you'll need to wait a few more days. Something nerdy: taste the coffee at different days from the roast date and notice any differences. 

If you're close to one of our cafés, then "rest" assured that you are getting the coffee at it's peak roast/rest ratio. 

"In our cafes, the process reaches the finish line and we practice what we preach," JT says. "Coffee is roasted and precisely rested for Sightglass service so our skilled team of baristas can pour you a drink when the coffee is expressing its absolute peak flavor."

Every cafe order is timed against that rest window. Our baristas aren't just pulling shots — they're pulling shots from coffee that's been tracked, from cherry to cup, to hit its peak on the day it's served.

That's the whole point. Freshness isn't a marketing line — it's a system we hold ourselves to, because we believe in the joy of specialty coffee done right.
