Two New Drinks, One Cloud: Making Our Coconut Cloud Series at Home

We built the Coconut Cloud series around a single idea: a frothed, coconut-based cream that floats on top instead of mixing in. Pour it right and you get a drink with two layers — coconut water below, cloud above — that stays that way until you stir it.

There are two versions. Espresso Coconut Cloud for the coffee drinkers, Matcha Coconut Cloud for everyone else. Same method, different cloud.

Both take about five minutes. Here's how to make them at home.

Espresso Coconut Cloud

Ingredients

  • Cup with 120g ice
  • 20g chilled Owl's Howl espresso 
  • 14g vanilla syrup
  • 40g plant-based coffee creamer (we use a lentil-based non-dairy cream)
  • 160g coconut water (we use Harmless Harvest — it's what gives the drink its color)

Method

  1. Stir the vanilla syrup into the chilled espresso. Set aside.
  2. Froth the creamer until it roughly doubles in volume.
  3. Pour in the vanilla espresso and keep frothing until fully combined and smooth.
  4. Fill your cup with ice and the coconut water.
  5. Pour the espresso cloud on top.
  6. Finish with toasted coconut flakes, if you want the crunch.


Matcha Coconut Cloud

Ingredients

  • Cup with 120g ice
  • 20g matcha
  • 12g vanilla syrup
  • 40g plant-based coffee creamer (we use a lentil-based non-dairy cream)
  • 160g coconut water (we use Harmless Harvest — it's what gives the drink its color)

Method

  1. Stir the vanilla syrup into the matcha. Set aside.
  2. Froth the creamer until it roughly doubles in volume.
  3. Pour in the vanilla matcha and keep frothing until fully combined and smooth.
  4. Fill your cup with ice and the coconut water.
  5. Pour the matcha cloud on top.
  6. Finish with toasted coconut flakes, if you want the crunch.


A Few Notes

The layering only works if the base and the cloud stay separate on the way in — pour the cloud slowly, over the back of a spoon if you want a clean line. Once you stir it, it's still a good drink, just a different-looking one.

Coconut water brand matters here more than usual. We use Harmless Harvest specifically for its color; a different brand will still taste right but won't give you the same effect against the ice.
