La Concordia, ChiapasJosé Argüello, a third-generation coffee grower, leads the family-owned Finca Santa Cruz in La Concordia. 95 hectares are dedicated to coffee, while 155 hectares are part of the Triunfo Verde Biosphere Reserve. José runs the farm alongside his sister Karina. As the director of CAFECO, a cooperative created to increase farmer income by cutting out middle-men, José aims to promote not only his own Finca Santa Cruz but also that of regional producers. When developing new products, José conducts extensive experimentation, including up to 200 hours of fermentation, carefully crafting exceptional coffee profiles. He will take a sample every hour and then roast and evaluate the taste with his team in order to determine the optimal fermentation time for that particular variety. In all of our years of sourcing coffee, we've never worked with someone who has fine tuned their operation to this degree. It's no surprise that José has won Mexico's Cup of Excellence three years since 2019.

Using the recipe that we use in-store, each 12oz bag makes 17 cups of coffee - just the right amount for one person to use in two weeks or for a pair of coffee drinkers to enjoy in a week.

Each 5LB bag makes 113 cups of coffee - just the right amount for one person to use in 8 weeks or for two people to enjoy in a month
How long does Sightglass coffee stay fresh?
Sightglass coffee tastes best up to six weeks after the roast date printed on the back of the sealed bag. Once opened, we recommend you use the coffee within two weeks for optimal freshness. Coffee will taste best when ground immediately before brewing.
